In the heart of the Grand Palais Éphémère, opposite the Eiffel tower, the greatest names in gastronomy gathered to celebrate the culinary arts at the 2025 edition of Taste of Paris – held from May 8 to 11. Café de l’Homme, a Parisian institution nestled in the jewel box of the Palais de Chaillot, shone in the spotlight thanks to the inspired presence of its chef, Wilfried Graux.

The embodiment of French art de vivre

With each creation, the Chef translated the very essence of the house during his Masterclass: a cuisine of emotion, seasonality and sharing, sublimated by the exceptional quality of the products. His contemporary interpretation of French terroir, punctuated by daring touches, seduced the most demanding palates, confirming Café de l’Homme’s place among the capital’s most coveted tables.

Chef's Masterclass: Refinement and Flavors

On Saturday, May 10 at 7:45pm, Chef Wilfried Graux presented his crunchy tartelette of wild sea bream, lacquered with citrus caramel infused with Sarawak pepper, accompanied by sweet potato-orange ice cream and a confit of Buddha’s hand.
This tartlet was a true sensory voyage. The crispness of the pastry, the tenderness of the fish, the mellowness of the ice cream, the sweet, tangy and peppery touches: each element was conceived as a note in a tasty score.

A moment of transmission and passion

In addition to tasting during his Masterclass, the Chef’s presence at this event was an opportunity to exchange, share and pass on his vision of gastronomy. A precious encounter between know-how and generosity, in a setting conducive to discovery and culinary wonder.
